It’s finally summer, and with summer comes vacations. And let’s face it, we all would love to get away from the rainy Ohio forecast that we have for the week and travel somewhere far away that is sunny and bright. So whether you are taking a road-trip with the whole family or whether you are flying across the pond by yourself, we wanted to share some tips and tricks to make your travel experience easier, less stressful, and, ultimately, more enjoyable.

Sharing a meal with someone is still one of the last intimate frontiers for the average man.

Doing it right can pay dividends in your personal and business life. Here is a list of the top rules for table manners if you want to be considered a gentleman at the dinner table.

  1. This one might come to a shock to the millennials out there. But turn your cell phone to silent, or better yet, off. There is nothing ruder than sitting on your phone while at the dinner table. Especially while on a date.
  1. If you are dinning with a lovely partner, be sure to pull out their chair so they can be seated first.
  1. After sitting down, put your napkin in your lap, ASAP.
  1. When placed with multiple eating utensils, don’t fret, it’s simple, start from the outside and work your way towards your plate. Here are a few more details about this topic.
  • Smallest fork: eating seafood
  • Next smallest fork: for eating salad
  • Biggest fork: save this for dinner
  • Small spoon: for coffee
  • Big spoon: for soup
  1. You might want to wait and assess the table to determine if grace will be said. Nothing is worse than catching yourself with a mouth full of food, while everyone is bowing their heads.
  1. For goodness’ sake, keep your elbows off the table!
  1. Mind your manners and always say please when requesting a dish be handed to you.
  1. Please do not attempt to taste everyone’s food at the table. The exception would be a good dinner among good friends and family, in this situation it is okay to request a taste of another’s entree.
  1. When bread is on the table, and you want butter, place a pat of butter on your roll plate and pass the butter onward. When buttering your bread, slice or break off a small piece at a time and butter individually. Repeat.
  1. Do not eat too fast. Eating too fast will not allow for good conversation. To make things easier, simply match the pace of your dinning companions.
  1. This should be an obvious no brainer. Please do not chew with your mouth open.
  1. If you have a mustache or man-beard, you probably already know this, but attempt to avoid getting food in your hair.
  1. Hair in your food is never pleasant. Let’s be honest. If you are dinning at a restaurant, kindly let the waiter know, without raising a fuss. If at a friend’s home, quietly and inconspicuously remove it.
  2. Before taking the last portion of food from a dish. Kindly ask if anyone else at the table would like some before you take the lead.
  1. This one should be a “well-duh” But please do not bring up unappetizing stories at the table.

We had a chance to meet Helen and Wayne Harray – Annabelle’s parents from New Zealand!

It was fun to share stories with them about their country and their plans for traveling. They plan to visit 11 countries in the next 6 months, seeking out ministry opportunities for their church membership. Pray for them as they journey through the U.S. and many other countries.

We also shared some information about the Knox County Relay for Life.
It is coming up next Friday 6/19/15. We talked with Donna Strosnider, Media Team Leader.
Here are some notes from our conversation.

1. What can you tell us about the purple ribbons that are hung around the square and down South Main Street?
Purple is the official color of the American Cancer Society Relay For Life.
Each year communities prepare for Relay For Life by holding “Paint the town Purple” events.  Paint the town Purples is a great way to raise awareness about Relay For Life in our community.

2. You’ve talked about Relay For Life with us before but for listeners that don’t know “What is Relay For Life”?
It is the American Cancer Society’s national signature activity. It brings together teams of families and friends from local companies, schools, clubs and organizations to walk around a track in relay fashion.  More than 4 million people around the world come together to Celebrate the lives of those who have battled cancer, Remember loved ones lost and empower individuals and communities to Fight Back against a disease that takes too much.

3. Why do you do this?
We Relay to Celebrate, Remember and Fight Back by raising money.  Now we are here to finish the fight.

4. How much do you raise at the event?
The American Cancer Society Relay For Life of Knox County has a 2015 goal of $261,991.00.  Last year we raised $262,974.88 blowing our 2014 goal out of the water.

5. Where does the money go?
Support of the American Cancer Society through Relay For Life is making a difference in the lives of millions of cancer survivors and their families across the country.  All proceeds raised from the event is used for cancer research, education, prevention and patient service programs such as helping pay for lodging at an American Cancer Society Hope Lodge, helping cancer patients get to and from treatments through the Road to Recovery program and other programs; for more details your listeners can contact the American Cancer Society at www.Cancer.org or 1-800-227-2345.

6. Where and when does the event take place?
Next Friday June 19th we’ll meet at the Mount Vernon High School Football Field and Track kicking off our Opening Ceremony at 6:00pm followed by a victory lap for all our attending cancer survivors. The Opening if always a very moving and touching ceremony that tends to pull at your heart strings.

7. How many people will be there?
There are 22 teams so far but we are hoping by the 19th that will grow to 32; we currently have 237 participants signed up. It’s not too late to join us in the fight against cancer.  This event is open to the public and is very family oriented and child friendly; in fact there will be a Bouncy House again this year.  It is always a major hit with the children and expected to be just as popular again this year.

8. What types of activities will you have for the public?
You can expect to see a Corn Hole Tournament, Cake Walk, Ice Cream Eating Contest, and a frozen T-Shirt contest however For a full list of Entertainment and activities please check out our Knox County web page at www.relayforlife.org/knoxco.  But, my favorite part of the event is our Luminaria Ceremony that takes place at 10pm – the lights around the track are turned off and hundreds of candles are lit in memory of cancer patients that have lost their fight and also in celebration of our cancer survivors.  It is very moving and spectacular all at the same time.  Any of your listeners that have never attended should come and see what we are all about.  There will be activities throughout the night until Noon on Saturday June 20th when the “Fight Back” ceremony begins – the total funds raised is announced and awards are presented to individuals and teams; closing the event at 1:00.

Say Hello to Healthy New Favorites: Five Food Substitutions You’ll Love
Fitness, nutrition, and weight loss expert Warren Honeycutt shares healthy (and still tasty) alternatives to popular foods that aren’t so great for you.

Memphis, TN (June 2015)—Without a doubt, one of the most difficult parts of making positive lifestyle changes is backing away from unhealthy foods. (And our favorite things always seem to be on that list, don’t they?) All too often, our quest for better health results in bland, joyless meals. Sooner or later, our desperate taste buds give in to temptation—and our eating habits end up right back where they started.

So what—if anything—can be done to break this cycle?

“The key to successfully changing your long-term eating habits is to make them sustainable—and that means finding options you like and can stick with,” says Warren Honeycutt, author of Get Lean for Life: 7 Keys to Lasting Weight Loss (Get Honeycutt, Inc., 2014, ISBN: 978-1-5008011-7-5, $19.95, www.getlean.guru). “As you navigate this process, you’ll find that healthy substitutions can be a game changer.”

Honeycutt understands if the previous statement elicited an eye-roll. For years, we Americans have been conditioned to believe that the healthier option is the less-tasty option. (And when it comes to processed foods and drinks, that’s often true!) But he promises that when you focus on natural options, it is possible to substitute great-tasting good-for-you food for great-tasting bad-for-you food.

Here, Honeycutt shares five substitutions you’ll love.

Cauliflower instead of potatoes. Substituting cauliflower for potatoes is a healthy alternative that’s gaining more and more popularity—and for good reason. “When prepared correctly, cauliflower mimics the texture and taste of mashed potatoes, with fewer calories and carbs,” says Honeycutt. “Here is my favorite cauliflower-instead-of-spuds recipe.”

Warren’s Twice-“Baked” Cauliflower

Put 24 to 32 ounces of frozen cauliflower in a saucepan and cover with water. Bring to a boil and boil until tender. Pour off the water and, either in the pan or a mixing bowl, beat the cauliflower with a mixer until smooth and creamy—as in the consistency of creamed potatoes.

Dip the creamed cauliflower into individual bowls. Top with fat-free sour cream, fat-free cheese, Butter Buds, and/or Molly McButter. Reheat each serving in the microwave for two minutes until piping hot. Add chives, bacon bits, salt, and pepper as desired, and serve.

Spaghetti squash instead of spaghetti noodles. Spaghetti squash isn’t nearly as carb-heavy as noodles, and it contains nutrients like vitamins A, B-6, and C, as well as omega-3 essential fatty acids. When baked or microwaved, it can be shredded into spaghetti-like strands with a fork.

“Spaghetti squash has a mild flavor and tastes great with just about any pasta sauce, including tomato- and cream-based sauces,” Honeycutt shares. “However, I think it’s delicious simply tossed with olive oil, salt, pepper, and perhaps a little Parmesan cheese.”

Sweet potatoes instead of white potatoes. No doubt you’ve already encountered this popular substitution—but a reminder never hurts! “Sweet potatoes are rich in vitamin A,” Honeycutt notes. “They also contain more vitamin C and fiber than white potatoes—and fewer carbs and calories. That said, it’s still healthiest to eat sweet potatoes baked and save sweet potato fries for occasions when you want to treat yourself.”

Hi-Lo instead of highly sugared cereal. Cereal is such a popular staple that many of us eat it for breakfast every day (and sometimes for lunch and dinner, too!). Unfortunately, even when we think we’re making healthy choices, that isn’t always the case. Although many popular cereals are labeled “healthy,” “natural,” “reduced sugar,” etc., they are loaded with sugar and contain little to no protein. Honeycutt recommends getting away from the empty calories by trying Nutritious Living Hi-Lo Cereal.

“Nutritious Living Hi-Lo Cereal contains 12 grams of protein per serving and only 1 gram of sugar,” he points out. “I challenge you to compare that to your favorite cereal. You may even find that the numbers are nearly reversed! Get in the habit of reading labels instead of taking products’ claims at face value—not just for cereal, but for everything you buy. This can have a huge impact on weight control.”

High protein shake instead of fast food shake. Honeycutt doesn’t name any names—but he does point out that a medium strawberry cheesecake option from a popular chain contains 920 total calories, 25 grams of fat, 100 grams of carbohydrates, 82 grams of total sugars, and only 15 grams of protein.

“Compare that to 235 total calories, 6 grams of fat, 22 grams of carbs, 2 grams of total sugars, and 25 grams of protein when you prepare your own protein shake,” he comments. “Here’s how to make this much healthier substitute.”

Warren’s High Protein Shake

Blend the following ingredients to desired consistency and enjoy!

  • 8 oz. almond milk
  • 1 scoop Optimum Nutrition casein protein powder
  • 5 large fresh strawberries
  • 2 tablespoons unsweetened shredded coconut
  • Stevia (sweeten to taste)
  • 1.5 cups of ice

“When you give these substitutions a try, you might just be surprised by how much you don’t miss your old favorites,” Honeycutt concludes. “And don’t discount the satisfaction that comes from knowing you’re making choices to boost your health and possibly extend your life.”

Life wouldn’t be the same without best friends. They’re the friends that can be counted on to be there at a moment’s notice. The ones who love, laugh, support, and cherish – in both good and bad times. Friends can be celebrated on any day of the year, but what better day than Best Friends Day? The day is largely unofficial, with no clear clue as to its origins, but that doesn’t stop the millions who mark the day each year from enjoying their best friends. Celebrations can be as low key or as flamboyant as desired. A picnic in the park, a get together over coffee, or a nice meal in a favourite restaurant are popular ways to celebrate a close friendship. Should distance keep best friends apart, it’s enough to pick up the phone to wish that special person a very happy Best Friends Day.

WHAT DRAWS PEOPLE TOGETHER AS FRIENDS?

  1. Common interests. This probably ties us closer to our friends than many would like to admit. When our interests diverge and we can find nothing to enjoy jointly, time spent together tends to rapidly diminish. Not that we can’t still care deeply about friends with whom we no longer share common interests, but it’s probably uncommon for such friends to interact on a regular basis.
  2. History.  Nothing ties people together, even people with little in common, than having gone through the same difficult experience. As the sole glue to keep friendships whole in the long run, however, it often dries, cracks, and ultimately fails.
  3. Common values. Though not necessarily enough to create a friendship, if values are too divergent, it’s difficult for a friendship to thrive.
  4. Equality. If one friend needs the support of the other on a consistent basis such that the person depended upon receives no benefit other than the opportunity to support and encourage, while the relationship may be significant and valuable, it can’t be said to define a true friendship.

WHAT MAKES A FRIEND WORTHY OF THE NAME?

  1. A commitment to your happiness. A true friend is consistently willing to put your happiness before your friendship. It’s said that “good advice grates on the ear,” but a true friend won’t refrain from telling you something you don’t want to hear, something that may even risk fracturing the friendship, if hearing it lies in your best interest. A true friend will not lack the mercy to correct you when you’re wrong.
  2. Not asking you to place the friendship before your principles. A true friend won’t ask you to compromise your principles in the name of your friendship or anything else. Ever.
  3. A good influence. A true friend inspires you to live up to your best potential, not to indulge your basest drives.

Of course, we may have friends who fit all these criteria and still don’t quite feel kenzoku. There still seems to be an extra factor, an attraction similar to that which draws people together romantically, that cements friends together irrevocably, often immediately, for no reason either person can identify. But when you find these people, these kenzoku, they’re like priceless gems. They’re like finding home.

HOW TO ATTRACT TRUE FRIENDS

This one is easy, at least on paper: become a true friend yourself. Be the friend you want to have. We all tend to attract people into our lives whose character mirrors our own. You don’t have to make yourself into what you think others would find attractive. No matter what your areas of interest, others share them somewhere. Simply make yourself a big target. Join social clubs organized around activities you enjoy. Leverage the Internet to find people of like mind. Take action.

We shared our favorite donuts for The Morning Thing Fave 5.
1. The Long John/Creme Stick – Miriam, Wesley and Annabelle (and many other people) love this classic donut topped with icing and filled with whipped cream.
2. Marcy loves the seasonal “chocolate candy cane” donut from Tim Hortons. It is only available at Christmas. It is a chocolate cake donut with chocolate icing sprinkled with crushed candy canes.
3. Our MT listener, Donna, loves the vanilla-custard filled donut. She says that it is SO much better than cream.
4. Another MT listener, Dave, loves any donut with red raspberry filling.
5. Karen and her husband have different “faves”. Karen likes chocolate long johns. Her husband Dave likes the plain cake donut dipped in his coffee.

National Doughnut Day

Date When Celebrated : Always the first Friday in June

National Doughnut Day honors the Salvation Army “Lassies” of WWI. It is also used as a fund raiser for needy causes of the Salvation Army.

The original Salvation Army Doughnut was first served by Salvation Army in 1917. During WWI, Salvation Army “lassies” were sent to the front lines of Europe. These brave volunteers made home cooked foods, and provided a morale boost to the troops. Often, the doughnuts were cooked in oil inside the of the metal helmet of an American soldier. The American infantrymen were commonly called doughboys. Salvation Army lassies were the only women outside of military personnel allowed to visit the front lines. Lt. Colonel Helen Purviance is considered the Salvation Army’s “first doughnut girl”.

On National Doughnut Day, look to see if your local doughnut shop, or other organizations, are offering free donuts to solicit donations for the Salvation Army or for another needy cause. If you find them, please be generous.

Note: The word “Doughnut” is often shortened to “Donut. So, if you see the term National Donut Day, its the same day.

The origin of the term “Doughboy”:
The term “Doughboy” was popular in referring to U.S. Army infantryman during World War I. American foot soldiers were occasionally called doughboys during the Civil War. The earliest references to the term, comes from the U.S-Mexican war.

The Origin of National Doughnut Day:
National Doughnut Day was established in 1938 by the Chicago Salvation Army to raise much-needed funds during the Great Depression, and to honor the work of World War I Salvation Army volunteers who prepared doughnuts and other foods for thousands of soldiers.

Operational Christmas Child Spiritual Impact Story from Fiji
“During a distribution trip, the Samaritan’s Purse team members from Australia and New Zealand as well as the leadership team participated in a special prayer service.  On the first night of the prayer service, many Hindu people were healed in Jesus’ name and five people gave their life to Christ.  One of those people now attends Grace Samaritan Church with her daughter.  Both of them will be baptized soon.  A little girl who had received a shoebox and participated in the prayer service started going to church each week. On the second night of the prayer service the gentleman who owned the building they were meeting in, a believer who had helped with the distributions that weekend, decided to surprise everyone with a large meal.  He told the team that God had blessed his family with the space needed for the distributions and the prayer meeting.  When he saw how happy the Hindu children and their families were, the Holy Spirit urged him to provide the meal for everyone.   All of these things that are happening in the Hindu community is because of God using the shoeboxes to impact the lives of children and their families, especially those who don’t know Jesus Christ.”

The 300 block of South Main Street will be transformed into a carnival atmosphere with great food, fun, and games for the whole family. Games will be hosted by volunteers and teens who regularly attend the Escape Zone.

The community is also invited to a Chamber of Commerce ribbon-cutting ceremony at 4:00 to celebrate recent renovations and upgrades to the center.

The Escape Zone is open every Friday evenings from 7 to 11. The center is operated on a total volunteer basis and is donor supported by individuals, churches and organizations.

(Tampa, FL) Women’s rights are a wonderful thing. Yet it has led to a confusing way for men now to interact with women in a polite way. It is common for many men to mistake equality with treating their lady just like another guy. Thankfully most women still want to be treated with class and dignity. Sadly following these 10 acts of chivalry will actually set you apart from all the other blots out there. Here are our top 10 acts of chivalry.

Open the Door

A true man of class will open the door for a lady. But an all around good person will hold the door for anyone regardless of the sex or age. Additionally opening the car door for your lady is a classy and under used technique as well.

Retrieve Dropped Items

If a lady drops and item, the correct and polite thing to do is to pick it up for her.

Walk on the Outside of a Sidewalk

In a true act of chivalry, walking on the outside of traffic allows your lady to be further from traffic. In the event of a drive by splashing, it is you who gets filthy and wet, instead of her. On a side note, this is a must when walking with children, as you act as a human shield in the event of anything coming in your direction from oncoming traffic.

Give up your Seat

This one should be a no brainer, but sadly is not. If you are riding public transportation, or are out where seating is limited, always give up your seat to a lady when present. This rule also works well for the elderly and physically handicapped.

Get out of your Car

In an utter lack of class and showmanship, not getting out of your car is about the absolute lowest point you can get when picking up your date.

Introduce her to People

When out and about with your lady friend, introducing her to acquaintances is an absolute must. For several reasons, this invites her to the conversation, and makes her feel comfortable. But most importantly it shows her that she is important to you.

Put on her Coat

Probably the easiest and most overlooked gestures, but assisting a lady with putting on her coat can go a long way.

Make sure she gets Home Safely

Always ensure that she gets home safely. Offer to walk her or drive her homes. If that is not possible ensure she sees her way to a cab, Uber or Lyft.

Walk her to the Door

This is a tricky one. Doing this incorrectly might give your lady the wrong impression, certainly on the first date. But you should certainly offer to walk her to the door. Even if she declines, still get out of the car, open her door and bid her adieu.

Be a Weatherman

In the captain obvious category, we have this. Please, ensure you are paying attention to the weather. Cold, hot, rain, chilly, it does not matter, be prepared. Especially if its pouring rain, it’s your job to ensure she gets from your car to the door of an establishment as dry as possible.

As you can see, being chivalrous is not hard; heck most of its old school common sense. The sad part of it is, this should be old school or an afterthought. In being a classy gentlemen, its apart of your everyday arsenal. Another tool for your tool belt, as they say.

Safe Food Handling Practices – Preventing Foodborne Illness

Are you having E. coli, salmonella, campylobacter, listeria, or cyclospora for dinner? These are just a few of the hundreds of organisms that could be lurking on your plate and putting you at risk of foodborne illness.

Given that 76 million people in the United States alone develop foodborne illnesses each year, it’s wise to take the appropriate measures to keep these uninvited guests from spoiling your meals. Surprisingly, your risk of contamination may be greatest when cooking at home rather than when eating out.

Although many people believe that they regularly follow safe kitchen practices, when videotaped while preparing meals at home, most were found to make many foodhandling errors that increased their risk of foodborne illness.

How careful are you when it comes to handling food? Take this quick quiz and find out.

1. Yes or No: Making her family a salad, Karina discards the outer layers of the head of lettuce and rinses it under water, washes the cherry tomatoes, and peels and slices the cucumber on a clean cutting board. Has Karina followed all of the proper food preparation steps to protect her family from food-borne illnesses?

The correct answer is: no.

Karina is on the right track but she did miss a step. Any bacteria on the outside of the cucumber can be transferred, via the knife, to the inside when the cucumber is peeled or cut, so it must be washed first.

Contrary to popular belief, your biggest health threat may not come from the herbicides, pesticides, and other synthetic chemicals found on the peel or rind of produce. Instead, you’re more likely to get sick from the naturally occurring, disease-producing organisms that can cling to the outside of produce. Any foods that come in contact with dirt or manure will contain a certain number of microorganisms. And any foods that are handled by people can likewise become contaminated.

Always thoroughly rinse vegetables and fruits — such as squashes, cucumbers, cantaloupe, and other melons — that you plan to peel or cut through. Use running water, rather than a bowl of water.

If you prefer to eat the peel, scrub the produce with a stiff vegetable brush to remove dirt and wash thoroughly to remove bacteria. Scrubbing with vinegar will strip off the wax coatings found on veggies such as cucumbers and some apples. And don’t forget to cut away any bruises or scars.

2. Shelly is making a batch of meatballs for a party. Which of the following is the safest type of ground beef?

  • prepackaged, lean ground sirloin, fresh not frozen
  • top round steak, freshly ground at the store
  • ground chuck patties, frozen not fresh

The correct answer is: top round steak, freshly ground at the store.

If Shelly wants to be really safe, she should select a piece of steak and ask to have it ground into hamburger meat while she waits. Freshly ground beef or poultry is less likely to harbor high bacterial loads than older ground meat. You also can purchase whole cuts of meat and grind it yourself at home in a food processor or meat grinder.

A single hamburger may contain meat from hundreds of different cows.

Regardless of which type of ground beef you choose, you can kill virtually all bacteria by cooking the meat to 160°F. Bacteria are commonly found in raw hamburger.

When preparing ground beef, take away the guesswork by using a thermometer to check the internal temperature of the meat. This will prevent food poisoning from bacteria such as E. coli. When reheating, internal temperatures should reach 165°F.

3. Which environmentally friendly task should Brian discontinue for health reasons?

Brian shouldn’t re-use his paper bags each week at the farmer’s market because old grocery bags or packaging materials may be contaminated from food previously stored in them. When given the chance, microbes that cause food poisoning will latch onto any new foods that they encounter. Instead, use cloth grocery sacks that you can wash in hot water on a regular basis.

Also, when you are bagging your groceries, keep meat and other raw animal products separated from other groceries, particularly fruits and vegetables. Fruits and vegetables can become cross-contaminated by coming into contact with raw meats, poultry, and seafood. Store food only in food-grade containers or packaging materials. Garbage bags and certain other non-grocery containers may be treated with chemicals and mold inhibitors that are not safe for consumption.

4. Yes or No: After her party, Linda throws away the dip from the vegetable platter, but enjoys munching on the leftover baby carrots and celery sticks. Has Linda put herself at risk for a long night of an upset stomach?

The correct answer is: Yes.

By eating those veggies, Linda is at risk of gastroenteritis. Cutting or peeling fruit and vegetables is equivalent to breaking the seal on a container. Once that seal is broken, bacteria will begin to grow on the cut or peeled surface of the vegetable.

In small quantities, bacteria typically won’t cause problems, but because bacteria multiply rapidly when temperatures are between 40°F and 140°F, never trust any cut produce that has been left out for more than two hours, or one hour in warm weather. That includes such items as fresh salsa and freshly chopped herbs such as cilantro or basil.

Most people don’t measure their refrigerator temperature and don’t know what it should be.To inhibit the growth of most bacteria on cut produce and other foods, the internal temperature of your fridge should always stay below 40°F (5°C). Putting large containers of hot food directly into the fridge or freezer before it has sufficiently cooled can disrupt the temperature within the refrigerator and increase the risk of rapid bacterial growth for all foods. Instead, divide hot leftovers into smaller portions in shallow containers so they can cool down as quickly as possible.

When the time comes to eat these leftovers, remember that the sniff test isn’t a reliable way of checking the safety. Bacteria that cause food-borne illness do not always cause bad tastes and odors in food. A safer rule of thumb is to discard any leftovers that are more than three days old, or that have not been properly stored or refrigerated.

5. Chris doesn’t have time to cook the fish that he has been defrosting in the refrigerator for almost two days. What should he do?

  • throw it away
  • keep it thawed until he has time to prepare and eat it
  • put it back in the freezer

The correct answer is: put it back in the freezer.

It’s safe for Chris to refreeze fish, poultry, and meat as long as they were defrosted in the refrigerator and not in the microwave or at room temperature. However, if the food was thawed out of the fridge or in the microwave, then do not refreeze it.

Because seafood is a common source of food-borne illness, it’s wise to be cautious when buying and preparing fish. Thoroughly cook all foods, but be particularly careful with oysters, clams, or mussles, which carry the greatest health risks from undercooking.

If you’re making sushi, buy seafood from reputable sources and store it in the coldest part of the refrigerator, usually under the freezer compartment or in a special meat drawer. Avoid packing it in tightly with other items to allow air to circulate freely around the package.

You Can Never Be Too Safe

Although the food industry and regulatory agencies do have effective surveillance and investigative methods, you cannot rely on only these systems to keep your food safe. Think of proper food handling as wearing a seatbelt. Because you never know when you are going to encounter dangerous food borne pathogens, treat all foods as if they may contain them.

Thoroughly cooking food, storing it at appropriate temperatures, preventing cross-contamination from meats and poultry to other foods, and keeping hands, tools, and kitchen surfaces sanitized can help keep a few bacteria from growing to a dangerously high number of pathogens.
